Paul was born in Rouen. When? No one knows anymore. His mother was from Normandie and his father from Auvergne.
He loved being in the Place de Cathedral; early in the morning when he took his shift and late at night going back home after a hard day’s work.
Often in front of his oven, he thought of Joan of Arc. He knew that the city owed her much, but as he says, it was a high price to pay.
In the summertime around 3 pm, he would sit on the terrace in front of the cathedral, sipping coffee, Italian ristretto of course. It was the afternoon, the resting time.
That’s how in the 50’s he met Robert SAVARY, the painter. They liked to meet for a pint. Paul liked Savary’s paintings and Savary loved Paul’s cuisine. God! Life was beautiful.
Only a Virginia could express Paul’s spirit. The work of Virginie Deligières (a Savary disciple) illustrated our menu. We thank her for the talent.
