Illustration du Paul

Paul was born in Rouen from a Norman mother and an Auvergnat father.

When? Nobody recalls anymore. He loved the Place de la Cathédrale. Either early in the morning arriving to the restaurant or late at night leaving it. In front of his oven he often thought of Joan of Arc and how much the city owed her its notoriety, but at what cost! In the summer, around 3pm, during his afternoon break, he would sit on the terrace sipping his coffee, always a black ristretto.

That’s how in the 50’s he met Robert Savary, the painter. They liked to meet for a chat and a pint of beer. Paul loved Savary’s painting who, in turn, loved Paul’s Cuisine. God! Life was so beautiful at the Place de la Cathédrale. Only a Virginie was able to capture this spirit for the menu illustration.

Façade du restaurant

Since 1898 Brasserie Paul is perpetuating the tradition of brasserie’s cuisine. An authentic traditional Norman cuisine made of fresh and local products, it is also a historical and cultural place where intellectuals and scholars like to meet.

Right next to the famous Cathedrale de Rouen, Brasserie Paul is in the center of the capital of Normandie.
